Matcha Lemon Collins

As spring begins to unfold, lighter and brighter flavors naturally find their way to the table. The Matcha Lemon Collins brings together fresh lemon, gin, and the gentle earthiness of matcha in a cocktail that feels vibrant and refreshing. Finished with a splash of soda water, it stays crisp and balanced with a subtle depth that keeps each sip interesting. Clean, lively, and effortlessly composed, it is the kind of drink that feels just right as days grow longer and evenings begin to linger.

How to Make:

Makes 1 Cocktail
2 oz. Gin
1 oz. Freshly Squeezed Lemon Juice
1 oz. Matcha Simple Syrup
Soda Water

Garnish: Lemon Twist & Sprig of Mint


Matcha Simple Syrup


1 cup Sugar
1 cup Water
2 tsp Matcha Powder

Fill a tall Collins glass with ice and pour the matcha simple syrup into the bottom of the glass. In a cocktail shaker filled with ice, combine gin and fresh lemon juice. Shake until well chilled. Slowly strain the mixture into the glass by pouring it gently over the back of a spoon so it layers above the syrup. Top with soda water, garnish with a lemon wheel and a sprig of mint, and give it a light stir just before drinking to blend the flavors. Enjoy!

Matcha Simple Syrup

To make matcha simple syrup, combine water and granulated sugar in a small saucepan over medium heat. Stir until the sugar fully dissolves, then remove the saucepan from the heat. Whisk in 2 teaspoons of ceremonial-grade matcha powder until smooth and fully incorporated. Allow the syrup to cool completely before transferring it to a clean jar or bottle. Store in the refrigerator for up to two weeks. This recipe yields approximately 1 cup (8 ounces) of syrup.
