How to Make:

Makes 1 Cocktail
1 1/2 oz. Gin
1 1/4 oz. Freshly Squeezed Lemon Juice
1 1/4 oz. Rosemary Syrup
Champagne or Sparkling Wine

Garnish: Lemon Twist

Rosemary Simple Syrup

1/2 cup Sugar
1/2 cup Water
4-6 Rosemary Sprigs

In a cocktail shaker filled with ice, gin, lemon juice, and rosemary simple syrup. Shake vigorously, then strain into a small coupe or Nick & Nora glass. Top up with champagne, garnish with a lemon twist, sprig of rosemary, and enjoy!

Rosemary Simple Syrup

To make rosemary simple syrup, combine 1 cup of water and 1 cup of granulated sugar in a small saucepan over medium heat. Stir until the sugar fully dissolves, then remove the saucepan from the heat. Add 5 to 6 sprigs of fresh rosemary to the syrup and let it steep for at least 30 minutes. For a stronger rosemary flavor, allow the sprigs to steep for up to 2 hours. Once steeped to your desired taste, strain the syrup into a clean jar or bottle, discarding the rosemary, and let it cool completely before using. Store in the refrigerator for up to two weeks. This recipe yields approximately 1 cup (8 ounces) of syrup.
