Pineapple Coconut Mojito
This is the pause we didn’t know we needed—that stretch of golden days where time slows and everything feels a bit softer. Our Pineapple Coconut Mojito is the perfect sip for this quiet in-between, where summer lingers and comfort takes center stage. With its cool mint, bright citrus, and subtle creaminess, it’s a refreshing way to lean into stillness, savor the moment, and enjoy the simple pleasure of being exactly where you are.

How to Make:
Makes 1 Cocktail
2 oz. White Coconut Rum
2 oz. Pineapple Juice
1 oz. Coconut Cream
1 oz. Freshly Squeezed Lime Juice
1 oz. Unsweetened Coconut Milk
4-5 Fresh Mint Leaves
Club Soda to top

Garnish: Fresh Pineapple Wedge & Mint Sprig
To make the Pineapple Coconut Mojito, start by gently muddling fresh mint leaves with lime juice in the bottom of a shaker to release their aroma. Add white coconut rum, pineapple juice, coconut cream, and unsweetened coconut milk. Fill the shaker with ice and shake well until the mixture is chilled and creamy.
Strain into a tall glass filled with ice and top with club soda. Garnish with a fresh pineapple wedge and a sprig of mint. Serve immediately and enjoy this smooth, refreshing sip.
*Note: for a sweeter drink adjust the amount of pineapple juice and/or coconut cream.
